As it starts to get colder it can get harder and harder to remember the good times of summer. To help we are updating a classic summer treat! We have taken the melty chocolate and gooey marshmallows from the campfire s’mores you love and put them in one easy to bake cookie!
Ingredients:
1 Stick of Butter at Room Temperature
1 Cup of Brown Sugar
2 Teaspoons of Vanilla
1 Egg
1 ½ Cups of Graham Cracker Crumbs
¾ Cup of All Purpose Flour
½ Teaspoon of Baking Soda
½ Teaspoon of Salt
1 Cup of Chocolate Chips
1 ½ Cups of Mini Marshmallows
Directions:
Preheat the oven to 350°
Cream the butter and sugar together in a mixer until smooth. Then mix in the eggs and vanilla.
In a separate bowl combine graham cracker crumbs, flour, baking soda, and salt. Then gradually add this mixture to the butter mixture. Mix until all is added. Do not overwork the dough. Finally stir in the chocolate chips.
Place cookies on a parchment lined cookie sheet. Bake for 4 minutes at 350°. Then pull out cookies and place 3-5 mini marshmallows on each cookie. Then place back in the oven until the marshmallows are golden brown, should be around 3 minutes. The cookies will set up as they cool.
